Traditional Spanish Paella (Valenciana)

Pella Valenciana

1/2 glass olive oil
2 cups regular rice (600 grs.)
1 green pimiento
1 jar red pimiento, drained
5 cups fish broth
1/4 kg clean shrimp
1 clean squid
1 can green peas
1/2 chicken
1/2 rabbit
1 finely sliced onion
4 tomatoes, sliced
1 garlic
salt
1/2 fresh lemon

Wash chicken and rabbit pieces, and pat dry. In a big pan, pour the oil, and add onion and garlic. Stir for two or three minutes. Add chicken and rabbit until brown, and cubed tomatoes. Stir for 5 minutes together with the green pimiento.

When ready, pour the rice stirring constantly for two or three minutes. Then, add the fish broth (hot), the clams, the sliced squid, and salt. Stir carefully with a wooden spoon (important), and add the green peas. Do not cover, and reduce the heat.

Watch the rice, and add hot water if necessary, do not stir just shake the pan once in a while. After 20 minutes, try the rice, add salt to taste, and when it is soft remove from heat and simmer for 5 minutes.

Garnish with the sliced red pimiento, and parsley. Sprinkle with lemon and serve immediately.
