Gazpacho (Andalusian)
Although not typically Ibicenco, Gazpacho is a very tasty and very popular cold tomato soup, served a a starter in most restaurants here. Very simple to make, you can whip this one up in 5 minutes. Serves 4 people
6 Tomatoes
2 Spring onions
3 Cucumbers
2 glasses of water
Seasoning (salt, pepper)
1/2 cup of virgin Olive Oil
2 cloves Garlic
Parsley
Juice of a lemon
Freshly baked baguette
Firstly make the dressing: Olive oil, freshly squeezed lemon juice, salt and pepper.
Then finely chop all the other ingredients together and add to the dressing. Then add the water and stir well. You can add as much or as little water as you like, depends on how thick you'd like your Gazpacho to be.
Serve chilled with baguette, garnish with parsley.
