Crujiente de Marisco y Verdura - Sea-food and Vegetable Crusty

Ingredients for one person:
200 gr. Angler Fish
2 Prawns
2 Cockles
100 ml. Coñac
Salt and pepper to taste
Salsa Americana (American sauce):
- 1 medium onion
- 2 carrots
- 1 leek
Prepare a stew with these ingredients, let it simmer for 2 hours. Take off the heat, put in the blender and strain.
Preparation:
Melt the butter in a saucepan and add the Angler Fish. Heat until browned on both sides (approx. 5 minutes), then add the prawns and the cockles. Cook over a low heat for about 2 minutes, or until nicely browned, then flambé with the cogñac and add the sauce. Serve with fresh bread.
